When I was young, my best treat was baking biscuits. And when I say baking biscuits, I mean helping to mix the dough, and cutting it into cool shapes – I remember clearly the plastic cutters in heart, circle, triangle, square and hexagonal shapes. And with the last remaining dough, we used to roll out our initials and sprinkle them with hundreds and thousands.
And with a penchant for baking and reliving a bit of my youth, not to mention a sweet tooth, I recently baked butter biscuits, using a variety of new cutters I have. From hearts and bunnies to dogs and cats. Oh what fun!
These are very easy to make, and it’s based on a recipe my gran and mom used. It’s a great recipe for those who don’t think they can bake, and a must-have for those who enjoy baking and who want the ultimate biscuit recipe. Just watch that all the biscuits you place on each tray are of similar thickness to ensure they are baked similarly – thin biscuits tend to brown and burn on the bottoms before the thicker ones are fully baked.
With this recipe will come a lot of fun, dozens of divine butter biscuits and the building of lots of great memories with your kids.
Ingredients:
250g butter
180g sugar
2 eggs
1 teaspoon vanilla essence or extract
430g Sasko flour
60g cornflour
pinch of salt
1 and a half teaspoons baking powder
Method:
Heat the oven to 210C. Cream the butter and sugar. Add the eggs and vanilla and beat well. Sift the dry ingredients and add to the butter mixture. Combine well, then roll out on a floured board with a floured baking pin. Cut or roll into shapes, and place on slightly greased baking tins. You can sprinkle the biscuits with chopped nuts, sprinkles or chocolate chips. Bake until light brown – around 10 to 15 minutes. Watch that the biscuits don’t burn.
